Meat from 4 (1 1/4 lbs to 1 1/2 lbs) lobsters, chopped coarsely
12 medium slices of vine ripened tomatoes Handful of mixed greens
4 Chabaso Ciabatta Stix™, any variety, cut lengthwise
3 garlic cloves, smashed
1/2 stick unsalted butter
3 T fresh lemon juice
1/3 C Extra Virgin Olive Oil
1/3 C celery, finely diced
1/3 C cucumbers, finely chopped
1/2 t sea salt
1. Whisk together lemon juice, olive oil and salt in medium sized bowl. Whisk in celery and cucumber.
2. Season with salt and pepper.
3. Add lobster meat and toss gently.
4. Melt butter with garlic in a small saucepan over low heat, mashing garlic with spoon.
5. Brush inside of STIX™ with garlic butter and grill, buttered side down, until golden, about 1 minute.
6. Fill STIX™ with lobster mixture, top with sliced tomatoes and mixed greens & enjoy!
Note: If serving with Chabaso Roasted Garlic STIX™, omit the garlic in the melted butter.
