Tomato Basil Tartine
Ciabatta is toasted with garlic-infused olive oil, topped with roasted tomatoes, mascarpone, and fresh basil for a savory, flavorful dish.
Ingredients
- 1 (15-ounce) loaf CHABASO® Rainin' Grains Ciabatta
- ½ cup Extra Virgin Olive Oil
- 1 head garlic, divided
- 4 cups cherry tomatoes
- 1 (8-ounce) container Mascarpone
- 10 to 15 fresh basil leaves
- --ground black pepper
Instructions
- Preheat oven to broil setting (high).
- Cut Ciabatta in half and then into 6, equally-sized portions. Set aside.
- In a small sauté pan, heat olive oil over medium-high heat until shimmering.
- Add garlic and stir, reduce heat to medium and slowly toast until garlic is light golden brown in color.
- Remove pan from heat, remove garlic from pan with slotted spoon and transfer to a paper towel lined plate to drain. Season lightly with salt.
- Reserve oil from pan, transferring it to a small bowl.
- Toss tomatoes with 2 tablespoons reserved oil and season with salt.
